Mandarin Cupcakes

Ingredients
- 1 can mandarin oranges (about 300 g drained weight)
- 250 g flour
- 2 tsp Baking powder
- 0.5 tsp Baking soda
- 1 egg
- 70 g sugar
- 80 ml vegetable oil
- 175 ml buttermilk
- 250 g cream cheese
- 50 g sugar
- 100 ml whipping cream
- krokant for garnish

Drain the mandarin oranges and catch the juice. Measure about 100 ml, set aside the rest.

Preheat the oven to 180°C fan and line a 12-cup muffin tin with paper liners. Mix flour with baking powder and soda. Whisk the egg with sugar until frothy, add oil, then alternately fold in the dry mix and buttermilk. Divide half of the batter into the cups, top each with 2-3 mandarin pieces, and fill with remaining batter.

Bake for about 25 minutes (test with a skewer). Let cool on the tin for 5 minutes before removing and cooling completely.

For decoration, blend cream cheese with sugar and 2 tbsp mandarin juice until smooth. Whip the cream stiffly and fold into the cheese mixture. Pipe a dollop onto each muffin using a piping bag with a straight tip. Garnish with remaining mandarins and krokant.
