Chocolate Cupcakes
Delicious dessert: Chocolate cupcakes are perfect for gifting, bringing, and snacking.
Ingredients
- 80 g dark chocolate
- 150 g butter
- 125 g sugar
- 2 Eggs
- Salt
- 250 g flour
- 2 tbsp cocoa powder
- 50 g chopped walnuts
- 2 tsp Baking powder
- 150 ml milk
- 100 g butter
- 50 g sugar
- 120 g cream cheese
- 150 g powdered sugar
Instructions

Preheat the oven to 180°C (350°F) with fan and top heat. Line a muffin tin with paper cups.

Coarsely chop the chocolate and melt it over a hot, non-boiling water bath. Remove from heat and let cool slightly.

Cream the butter with sugar and add eggs one at a time, seasoning with a pinch of salt. Mix flour, cocoa, walnuts, and baking powder; fold into the butter mixture alternately with milk. Stir in half the melted chocolate and pour batter into prepared cups. Bake for about 25 minutes or until a skewer comes out clean.

Meanwhile, beat the remaining butter with sugar until fluffy, then mix in cream cheese and chocolate. Whisk in powdered sugar until spreadable.

Remove cupcakes from oven, release from tins, and let cool. Pipe the frosting onto the cupcakes using a star tip and garnish with mint leaves.
