Ingredients

  • 150 g butter
  • 150 g sugar
  • 3 eggs
  • 2 untreated limes (juice and zest)
  • 150 g flour
  • 0.5 tsp Baking powder
  • 2 tbsp shredded coconut
  • 3 egg whites
  • 1 tbsp lime juice
  • 150 g powdered sugar

    Preheat the oven to 180 °C fan‑forced. Line a muffin tin with paper cups. Beat butter with sugar until fluffy. Whisk eggs with lime juice and zest, then fold in flour, baking powder and coconut into the butter mixture. Mix well and fill the cups. Bake for about 20 minutes until golden brown.

    Beat egg whites with lime juice until stiff peaks form. Gradually add sugar while beating until glossy meringue forms. Spread over the cupcakes and bake for another 5–10 minutes at 200 °C until golden brown.
