Ingredients
- soft butter (for the pan)
- 120 g butter
- 100 g flour
- 50 g ground almonds (peeled)
- 1 tsp Baking powder
- 1 vanilla pod (aroma)
- 0.5 tsp orange zest (unprocessed)
- 3 eggs
- 2 tbsp honey
- 20 ml rum
- 100 g sugar
- powdered sugar (for dusting)
Instructions

Preheat the oven to 160°C with fan and top heat. Grease the cavities of a Madeleine pan with butter.

Melt the butter. Mix flour with almonds, baking powder, vanilla aroma, and orange zest. Whisk eggs with honey, rum, and sugar until creamy. Add melted butter and flour mixture, stirring until smooth batter.

Fill the pan cavities about 3/4 full and bake for ~15 minutes until golden brown. Carefully remove from cavities and cool on a wire rack. Dust with powdered sugar and serve with tea if desired.
