Mackerel with Salsa

Ingredients

  • 2 limes
  • 2 Avocados
  • 2 red bell peppers
  • 0.5 Red Onion
  • 2 tbsp sherry vinegar
  • 4 tbsp olive oil
  • 3 tbsp chopped parsley
  • Salt
  • Pepper (freshly ground)
  • 4 gold mackerel fillets (about 130 g each)
  • lime wedges for serving

Instructions

    Squeeze the limes. Cut the avocados in half, remove the pit, peel off the skin and dice the flesh into ~1 cm cubes. Mix immediately with about half of the lime juice. Wash, deseed and dice the bell peppers. Peel the onion and finely dice it. Combine all ingredients, add sherry vinegar, 1 tbsp oil and parsley, season the salsa with salt and pepper.

    Rinse the fish fillets and pat them dry. Drizzle with the remaining lime juice and brush with olive oil. Grill on a hot grill or in a grill pan for about 2 minutes per side, seasoning with salt and pepper while cooking. Place on plates and spread the salsa over the fillets. Serve with lime wedges as desired.
