Grilled Mackerel with Vegetables

Ingredients

  • 2 mackerel fillets
  • Salt
  • Pepper (freshly ground)
  • Lemon juice
  • 1 Garlic clove
  • 1 tbsp oil
  • 250 g sweet potatoes (batatas)
  • 200 g Green beans
  • Salt
  • 1 tbsp butter

Instructions

    Wash and pat dry the mackerel fillets, remove any pin bones with tweezers, halve them, season with salt and pepper, and drizzle with lemon juice.

    Cook the sweet potato wedges in their skins in boiling salted water for 20 minutes, let cool, then slice into thick pieces.

    Rinse the green beans, trim ends, blanch in heavily salted boiling water for 8-10 minutes, shock in ice water, and drain.

    Mix the oil with pressed garlic.

  5. 5.

    Grill the mackerel and sweet potato slices on a hot grill, brushing them with garlic‑oil as they cook.

    Sauté the green beans in hot butter, seasoning with salt and pepper.

    Plate the mackerel fillets atop the sweet potato wedges and green beans.
