Ingredients
- 4 ready-to-cook mackerel filleted and de-scaled (8 fillets with skin)
- 1.5 tbsp Dijon mustard
- 0.75 bunch oregano, chopped
- olive oil for drizzling
- 1 stalk leek
- 1 tbsp coriander seeds, coarsely crushed
- Sea salt
- pepper from the grinder
Instructions

Preheat oven to 180°C (356°F) with upper and lower heat. Brush a baking tray with olive oil. Wash, trim, and slice the leek into rings. Score the skin side of the mackerel, flip it over, and spread mustard on the flesh. Lightly salt and pepper.

Place 4 halves skin-side down on the tray. Distribute leek rings over them, sprinkle coriander seeds, and season lightly again with salt and pepper.

Add the remaining 4 fillets on top. Drizzle generously with olive oil and bake in the oven for about 12-15 minutes until golden brown. Serve immediately.
