Ingredients
- 400 g macaroni
- Salt
- 40 g Butter
- 3 tbsp wheat flour type 405
- 250 ml milk (3.5% fat)
- 200 g heavy cream
- pepper (ground)
- nutmeg
- 3 egg yolks
- 100 g Reblochon (fine-flavored cheese)
- 4 slices ham
Instructions

Cook the pasta according to package instructions in plenty of boiling salted water until al dente, drain into a colander and let rest.

Meanwhile melt butter in a saucepan and whisk in flour. Deglaze with milk and cream, stirring constantly until it boils. Remove from heat, season with salt, pepper and freshly grated nutmeg, let cool slightly, then stir in the egg yolks.

Slice the cheese and cut the ham into strips. Layer the cheese, ham, and macaroni in a baking dish. Bake the casserole in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for about 25 minutes until golden.
