Foil Salmon with Vegetables

Ingredients
- 4 salmon fillets (about 160 g each)
- 2 carrots
- 200 g celeriac
- 1 stalk leek
- 200 g cocktail tomatoes
- 4 tbsp olive oil
- Sea salt
- Pepper (freshly ground)
- 100 ml dry white wine
- 4 sprigs Rosemary

Preheat the oven to 180°C fan.

Rinse the salmon and pat it dry. Peel and finely dice the carrots and celeriac. Wash, trim, and slice the leek into rings. Rinse the tomatoes and halve them.

Combine the vegetables with olive oil, sea salt, and pepper. Spread about half of the mixture onto four large pieces of foil. Season the salmon with salt and pepper and place it on top of the vegetable bed. Add the remaining vegetables, drizzle white wine over everything, add rosemary sprigs, and tightly seal the foil around the fish and veggies.

Bake in the oven for approximately 25 minutes and serve the foil salmon with vegetables.
