Carrot Patties with Dried Apricots

Ingredients
- 600 g Carrots
- 80 g dried apricots
- 100 g roasted and chopped almonds
- 5 slices old toast bread
- 1 egg
- 0.5 lemon (juice and zest)
- 1 tbsp honey
- 0.5 bunch parsley (chopped)
- 2 shallots
- 2 Garlic cloves
- 1 tsp ground coriander
- 1 tsp harissa
- Salt
- freshly ground pepper
- flour (as needed)
- oil (for frying)
- parsley (for garnish)
- lemon wedges (for garnish)
Instructions

Peel carrots and steam for about 20 minutes until soft. Remove, roughly mash, and let steam off.

Finely chop apricots.

Peel shallots and garlic, then finely chop them as well. Sauté both in 2 tbsp hot oil until translucent, then add coriander, harissa, parsley, and apricots. Remove from heat and mix into the carrots. Add almonds, grated toast bread, egg, lemon juice, zest, and honey. The dough should be firm yet slightly pliable; if too wet, stir in a little flour. Season with salt and pepper.

Shape about 20 small patties from the mixture and fry in hot oil in a non‑stick pan for 2–3 minutes per side until golden brown. Drain on paper towels and serve warm or cold.
