Low-Carb Pancakes with Banana

Ingredients
- 110 g large bananas (1 large banana)
- 50 g almond flour (5 tbsp)
- 2 Eggs (size M)
- 1 tsp Baking powder
- 2 tsp Rapeseed Oil
- 50 g blackberries
- 100 g Yogurt (3.5% fat)
- mint

Process the banana, almond flour, eggs and baking powder into a smooth mixture without lumps in a food processor or with a hand blender.

Heat a little oil in a pan and add 1 tbsp of batter at a time. Depending on how large you like your pancakes, the batter is enough for up to 10 (small) pancakes. Bake for 3-4 minutes until golden brown on both sides over medium heat and drain on a kitchen towel. Wash and dry the blackberries. Serve the pancakes with yogurt, blackberries and garnished with mint.
