Overnight Oats with Blueberries and Coconut

Vegan Overnight Oats with fresh blueberries and coconut – a delicious breakfast.

Ingredients

  • 5 tbsp Rolled oats (75 g)
  • 3 tbsp Coconut flakes (30 g)
  • 150 g Soy yogurt alternative
  • 150 ml Coconut drink
  • 1 tbsp Syrup (e.g. coconut blossom syrup; 15 g)
  • 100 g Blueberries (fresh or frozen)
  • 2 tbsp Pumpkin seeds (30 g)

Instructions

    Mix the rolled oats with 2 tbsp coconut flakes, yogurt alternative, coconut drink and coconut blossom syrup. Add half of the blueberries and refrigerate for at least 2 hours, preferably overnight.

    The next morning, pour the vegan overnight oats with blueberries and coconut into two bowls or airtight jars. Sprinkle with pumpkin seeds, remaining blueberries and remaining coconut flakes.
