Ingredients

  • 1 kg sugar
  • 250 g rice flour
  • 2 tsp lemon salt
  • 200 g shredded coconut
  • peeled almond kernels (for garnish)

    Line a square pan (e.g., small cake tin or glass mold) with foil. Mix the rice flour and sugar, whisk in 1.2 l water, and bring to a boil while stirring occasionally. Add the lemon salt and continue cooking until the mixture becomes pliable. To test consistency, scoop some with a teaspoon, drop into ice‑cold water, and shape a ball with your fingers.

    If it remains elastic after removal, the texture is correct. Pour the mixture into the prepared pan and let set. Sprinkle a board with shredded coconut and pour the set mass onto it. Remove the foil. Cut the mass into evenly wide strips, roll them in coconut flakes, then slice into rounds and gently press an almond into each.
