Ingredients

  • 1 kg sugar
  • 250 g rice flour (Turkish specialty shop or Asian store)
  • 1.25 l water
  • 1 EL rose water
  • 1 bottle lemon aroma
  • 1 tsp lemon salt (Turkish specialty shop)
  • powdered sugar (for dusting)

    Line the mold with a cotton cloth and dust it with half of the rice flour. In a pot combine sugar, water, and the remaining rice flour; bring to a vigorous boil over high heat. After the first boil add the lemon salt and aromas, then simmer the syrup on low flame while stirring constantly until the mixture becomes formable. Stir until it has a moldable consistency. Take a spoonful of the mixture, drop it into ice water, and shape it into a ball with your fingers. If this test ball is elastic after cooling and does not fall apart, the mixture is ready.

    Pour the hot mixture into the prepared mold and allow it to cool completely and set. Dust a board with powdered sugar and transfer the set mass onto it. Remove the cloth and discard excess rice flour. Dust a knife with powdered sugar and cut the mass into bite‑sized square pieces. Toss the pieces in powdered sugar and arrange them on a platter or store them in an airtight container.
