Lobster with Olive-Walnut Butter

Ingredients

  • 500 g frozen raw lobster tail (1 frozen raw lobster tail)
  • 60 g green olives
  • parsley
  • 50 g walnut kernels
  • 1 Garlic clove
  • 100 g Soft Butter
  • 1 tbsp Lemon Juice
  • 2 Spring Onions

Instructions

    Allow the lobster tail to thaw. Place in boiling water and cook for 10 minutes. Let it cool slightly and cut the tail lengthwise once.

    Preheat the oven to 250°C (gas: level 5-6, convection: 230°C). Separate olive flesh from pits. Rinse parsley, shake dry, and pluck leaves from stems. Roughly chop 40 g walnuts. In a bowl combine butter, parsley, and walnuts. Peel garlic and squeeze into the mixture. Mix well.

    Spread the olive butter over the lobster meat. Place the tail halves in a baking dish, add remaining walnut kernels, and bake for 8 minutes. Trim spring onions, rinse, and finely chop. Sprinkle over the lobsters. Serve immediately.
