Ingredients

  • 600 g waxy potatoes
  • Salt
  • 1 bunch parsley
  • 120 ml Vegetable broth
  • 0.5 untreated lemon (juice and zest)
  • 5 tbsp olive oil
  • 2 cooked lobsters (about 500 g each)
  • pepper (ground)
  • 2 tbsp olive oil (for brushing)
  • basil (for garnish)

Instructions

    Wash the potatoes and boil them in salted water for 25-30 minutes with skins on. Drain, let steam off, peel, and slice.

    Wash parsley, shake dry, strip leaves, finely chop. Mix with potato slices, hot broth, lemon juice and zest. Let stand about 10 minutes, stir in 3 tbsp oil, season with salt.

    Turn the head, tail, and legs of each lobster off. Slice the tails lengthwise with a very sharp knife, remove the gut, leaving the meat in the shell. Release the claw meat and set aside. Brush the tails with olive oil and grill them for 3-4 minutes in a hot skillet, lightly salting.

    Arrange potatoes on plates, top each with one claw piece and a grilled half tail, garnish with basil, and serve.
