Pasta with Lobster, Tarragon and Mango

Ingredients

  • 1 lobster (cooked)
  • 4 small sprigs of tarragon
  • 1 small ripe mango
  • Salt
  • white pepper
  • Cayenne pepper
  • 50 ml coconut milk
  • 50 ml white wine
  • 0.5 tsp Curry Powder
  • 400 g spaghetti
  • 1 tbsp butter

Instructions

    Release the lobster, set aside the claws for garnish. Peel the mango, remove the pit and cut into small pieces. Cook the spaghetti in boiling salted water until al dente. Meanwhile sauté the mango pieces in butter, season with salt, pepper, curry and cayenne, deglaze with coconut milk and white wine, then set aside (do not continue cooking!).

    Add the lobster pieces to the sauce and warm through. Wash and dry shake the tarragon. Mix the spaghetti with the sauce and arrange on preheated plates. Drizzle the lobster pieces from the sauce over the pasta and garnish with tarragon.
