Ingredients

  • 6 slices sandwich bread (e.g., whole grain)
  • 1 handful sprout mix
  • 180 g mayonnaise
  • 60 g yogurt
  • 1 tsp curry powder
  • Salt
  • Lemon juice
  • Pepper
  • 1 flesh tomato
  • 350 g cooked lobster meat (ready to use)

Instructions

    Grill, bake or toast the bread. Rinse the sprout mix and drain on kitchen paper. Whisk together mayonnaise, yogurt, half of the sprouts, and curry until smooth. Season with salt, lemon juice, and pepper. Wash the tomato, remove the stem, and slice very thin.

    Spread the cream on four slices of bread, top with tomato slices, lobster meat, and a few remaining sprouts, then cover with another slice of bread. Cut the sandwiches diagonally and secure with toothpicks. Serve as an exceptional snack, for example at a picnic.
