Lobster Salad

Ingredients
- 2 lobster tails
- 200 ml white wine
- 4 stalks celery
- 2 Garlic cloves
- 6 tomatoes
- 1 bunch spring onions
- 0.5 bunch Parsley
- Salt
- Pepper (freshly ground)
- 4 tbsp olive oil
- 2 tbsp wine vinegar
- 1 tsp Honey
Instructions

Wash the lobster tails.

Wash the celery, trim off the green tops and cut off the tougher ends.

Peel the garlic cloves and finely chop them.

Wash the tomatoes, quarter them, remove seeds and dice them.

Wash the spring onions, cut off the dark green parts, add to a pot with celery pieces, white wine and about 1.5 l water and bring to a boil. Add the lobster tails and simmer gently for about 15-20 minutes. Remove from broth, rinse, split lengthwise, remove shell, devein and slice into rounds. Place in a bowl and add 3-4 tbsp of the broth.

Slice remaining celery and spring onions into rings or slices. Wash parsley, shake dry and finely chop with celery greens. Add everything to the lobster. Mix olive oil, garlic, tomatoes, honey and wine vinegar together and season with salt and pepper. Let stand for about 20 minutes, taste and serve.
