Tomato and Feta Salad (Greece)

Ingredients
- 1 large cucumber
- 4 tomatoes
- 1 green bell pepper
- 1 Red Onion
- 200 g sheep cheese
- 100 g black olives (pitted)
- 3 tbsp white wine vinegar
- 0.5 lemon (juice)
- 1 pinch sugar
- Salt
- Pepper (freshly ground)
- 5 tbsp olive oil
- 1 sprig oregano
Instructions

Wash the cucumber and trim the ends. Cut it lengthwise into quarters, then dice into bite-sized pieces.

Wash the tomatoes and remove the stems. Slice them into ~2 cm wide strips, then cut into large cubes.

Wash the bell pepper, halve it, remove the stem, seeds, and white membranes. If any seeds remain, knock them out head‑up. Cut the flesh first into strips, then into large cubes.

Peel the onion, halve lengthwise, place halves cut side down on a cutting board, and slice thin rings.

Place all vegetables in a salad bowl.

Drain the feta and crumble it by hand or dice with a knife. Drain the olives. Sprinkle both over the vegetables.

In a small bowl whisk together vinegar, lemon juice, sugar, salt, and pepper. Slowly drizzle in olive oil while whisking until emulsified. Tear oregano leaves from stems, chop finely, and fold into the dressing.

Pour dressing over salad, toss gently, adjust seasoning, plate, and serve with pita on the side.
