Ingredients

  • 500 g cooked lobster meat
  • 0.5 bunch cilantro
  • 1 Shallot
  • 2 tbsp sesame oil
  • 2 tbsp Lime juice
  • Salt
  • black pepper (freshly ground)
  • 2 Grapefruits
  • cilantro for garnish
  • 4 cooked, split lobster claws for garnish

Instructions

    Cut the lobster meat into small cubes. Rinse the cilantro, shake dry, pluck the leaves and finely chop. Peel the shallot, finely chop it as well, then mix with the cilantro, oil, and lobster meat; season with lime juice, salt, and pepper.

    Peel the grapefruits, removing the white pith, and separate the fruit segments from the membranes.

    Place a ring mold (about 6 cm diameter) on a plate, fill with the tartare mixture, then lift the ring. Repeat with the remaining mixture. Arrange grapefruit segments around it and garnish with cilantro leaves and one lobster claw each before serving.
