Lobster on Butter Herb Sauce

- 4 lobster (pre-cooked, ready to eat)
- 0.5 lemon
- 250 g butter
- 3 egg yolks
- 75 ml dry white wine
- Salt
- 2 tbsp freshly chopped chervil

Detach the lobster claws from the body or use a lobster pick. Split the lobster lengthwise with a large sharp knife, carefully remove the meat from the body and claws. Squeeze the juice of the lemon for the sauce.

Melt the butter in a small pot over medium heat and remove from the flame. In a mixing bowl whisk together the eggs, white wine, salt and some lemon juice. Place the bowl over a simmering water bath and whisk until frothy. Remove from heat and gradually fold in the melted butter, first dropwise then in a thin stream, until the sauce is thick and glossy.

Season with salt and lemon juice, stir in the chopped chervil. Spoon the sauce onto plates, arrange the lobster on top, drizzle with some liquid butter and serve immediately.
