Shrimp Skewers on Sugarcane Vietnamese Style

Ingredients
- 100 g fresh pork belly (thinly sliced)
- 500 g giant shrimp
- 1 Garlic clove
- 2 shallots
- 1 tbsp sugar
- 1 tbsp Vietnamese fish sauce
- Salt
- pepper (ground)
- 2 tbsp oil
- 2 pieces of 15 cm sugarcane sticks (or 16 wooden skewers as substitute)

Instructions

Peel the sugarcane and cut into eight 1 cm thick sticks.

Cook pork belly in water for about 4 minutes, remove, drain, and chill in the freezer.

Peel shrimp, split lengthwise, remove the vein, wash briefly if desired, then pat dry. Finely chop shrimp and bacon but do not puree. Mix garlic, shallots, sugar, and fish sauce; season with salt and pepper. Chill for 30 minutes.

Divide the shrimp mixture into eight portions and shape around the sugarcane sticks with damp hands, ensuring the sugarcane is fully wrapped so it does not burn when grilling. Brush with oil and grill on a hot grill for about 5-6 minutes on all sides until crispy and golden brown. Serve on salad with cilantro garnish.
