Rice paper roll with tuna

Ingredients
- 150 g rice noodles
- 0.5 cucumber
- 0.5 red bell pepper
- 1 large carrot
- 60 g lettuce (e.g., romaine)
- 200 g tuna (canned; in own juice)
- 4 sheets rice paper (Ø 22 cm)
Instructions

Cook the rice noodles according to package instructions. Then drain into a colander, rinse with cold water and let drain. Cut smaller with scissors.

Peel the cucumber and finely julienne or grate it. Wash, trim and cut the bell pepper into long strips. Peel the carrot and slice lengthwise into thin rounds e.g., with a vegetable peeler. Rinse the lettuce leaves, shake dry and cut into wide strips. Drain the tuna and gently flake.

Fill a shallow bowl slightly larger than the rice paper sheets with water. Place a kitchen towel beside it and have a second towel ready. Dip each sheet individually in the water for about 1 minute to soften. Then carefully lay on the towel and pat dry with the second towel.

Layer with prepared ingredients, fold edges and roll up. For serving cut into bite-sized pieces and serve with soy sauce for dipping.
