Linguine with Vegetables

Ingredients

  • 400 g linguine
  • olive oil (cold‑pressed)
  • Salt
  • Pepper (freshly ground)
  • 3 bell peppers (2 red, 1 yellow)
  • 1 small broccoli head
  • 3 garlic cloves (finely chopped)
  • 1 Zucchini
  • parmesan

Instructions

    Wash the bell peppers, halve them, remove seeds, trim stems, and slice lengthwise into strips.

    Wash the broccoli and cut into florets. Blanch florets in boiling salted water for 4 minutes, then drain well. Wash the zucchini, quarter lengthwise, and cut into small pieces.

    Heat 4 tbsp oil in a pan and sauté peppers with zucchini over high heat for about 1 minute. Reduce heat, add 50 ml water and garlic. Cover and simmer on medium heat for 8–10 minutes, stirring frequently. Add broccoli and season with salt and pepper.
