Lime Tart

Ingredients
- 200 g butter cookies (or whole grain cookies if desired)
- 120 g butter (melted)
- 1 egg
- 4 egg yolks
- 1 can sweetened condensed milk (about 400 g)
- 5 organic limes
Instructions

Crush the cookies in a food processor with a blade and mix in the melted butter. Line a springform pan with the mixture and shape a 1 cm rim.

Wash the limes and zest two of them finely. Set aside some zest for garnish.

Squeeze all limes, combine the juice with the zest. Beat the egg yolks with one whole egg, add the condensed milk and lime mixture, whisk until smooth, then pour into the pan.

Bake in a preheated oven at 180°C for about 30 minutes. Cover with foil to keep the cake bright.

Remove from the oven, let cool, and serve garnished with lime zest.
