Caramel Nut Cake

Ingredients
- 350 g soft butter
- 100 g sugar
- 275 g flour
- 400 g sweetened condensed milk
- 40 g liquid honey
- 4 tbsp coarsely chopped walnuts
- 220 g dark couverture chocolate

Preheat the oven to 160°C fan.

Cream 225 g of butter with the sugar, sift in the flour and knead into a smooth dough. Place the mixture in a 21x21 cm cake tin lined with parchment paper, press it flat and bake in the preheated oven for 25-30 minutes until golden brown. Remove from the oven.

For the filling warm the remaining butter, add the condensed milk and stir in the honey, bring to a boil and simmer while stirring for about 30 minutes until everything caramelises. Fold in the walnuts. Pour over the base and let cool.

Melt chopped couverture chocolate over a double boiler, pour it over the caramel and allow to set completely for at least 3 hours. Before serving remove from the tin and cut into squares.
