Ingredients
- 1 l Dashi stock
- 4 tsp soy sauce
- 2 tsp mirin
- 1 tbsp light miso paste
- 1 tsp dashi powder

Dashi stock: Scrub 1 piece of kombu (an algae variety) measuring 6 × 4 cm with a kitchen towel, cut into 4 pieces with scissors and bring to a boil in 1 l water. Remove the kombu and add 50 g bonito flakes (dried slices of lean bluefish) and 5 tbsp dashi powder to the stock. Bring to a boil again, then once the fish flakes have settled at the bottom, strain everything through a kitchen towel.

Bring 1 l Dashi stock to a boil in a pot, add 4 tsp soy sauce with 2 tsp mirin. Stir in 1 tbsp light miso paste and 1 tsp dashi powder and let it steep for about 30 minutes.
