Letscho with Sausage

Ingredients

  • 1 kg paprika peppers (red and yellow)
  • 1 green pepperoni
  • 400 g beef tomato
  • 1 onion
  • 2 Garlic cloves
  • 2 tbsp olive oil
  • 2 tsp sweet paprika powder
  • Salt
  • Pepper (freshly ground)
  • 400 g Vienna sausages
  • 2 tbsp balsamic vinegar
  • sugar

Instructions

    Halve the paprika peppers lengthwise, remove seeds and white membranes, wash the halves, quarter them and cut into bite-sized pieces. Wash, clean and slice the pepperoni into thin rings. Blanch the tomatoes, peel, remove stem ends and chop into pieces. Peel and finely dice the onion and garlic.

    Heat oil in a wide pot, sauté onions and garlic, then sprinkle paprika powder over them. Add the peppers, pepperoni and tomatoes to the pot, season with salt and pepper, and simmer on high heat for about 3 minutes until some liquid evaporates. Slice the sausages. Deglaze the vegetables with balsamic vinegar, reduce heat, add the sausages, cover and let stew gently for about 20 minutes. Season with salt, pepper and sugar.
