- 200 g fresh young spinach leaves
- 2 carrots
- 1 onion
- 1 Garlic clove
- 30 g Butter
- 400 g peeled red lentils
- 300 g canned tomatoes
- 700 ml vegetable broth
- Salt
- ground pepper
- 1 tsp cumin
- 250 g Brie cheese

Wash, rinse, and dry the spinach. Peel the carrots, onion, and garlic. Slice the carrots into thin rounds and finely dice the onion and garlic.

Heat butter in a pot and sauté the diced onion, garlic, and carrot slices for 2-3 minutes. Add the rinsed lentils and pour in the tomato juice. Top with broth and season with salt, pepper, and cumin. Simmer over medium heat for 15-20 minutes until the lentils are tender; add more broth if needed.

Stir the spinach into the soup. Slice the cheese. Taste the soup, serve in bowls, top with cheese slices, and enjoy.
