Pan-seared salmon fillet with red onions and oranges: Every bite of this quick fish recipe fuels your body with omega‑3 fatty acids.

Ingredients

  • 3 red onions
  • 2 organic oranges
  • 3 basil stems
  • 25 g pistachios
  • 40 g salmon fillet
  • 2 tbsp oil
  • Salt
  • Pepper
  • 2 tbsp Red wine vinegar

Instructions

    Peel the onions and cut them into wedges.

  2. 2.

    Peel one orange thickly, removing all skin and white pith. Slice the orange and roughly chop it.

  3. 3.

    Rinse the second orange hot, dry it, grate its zest finely, halve it and squeeze out the juice.

    Wash the basil, shake off excess water, pluck the leaves and roughly chop them. Chop the pistachios as well.

    Wipe the salmon slices dry, brush them lightly with oil. Distribute the pistachios on one side of each fish slice.

    Heat the remaining oil in a pan and sauté the onions over medium heat for 4–5 minutes while stirring. Season with salt and pepper.

    Add orange juice, zest and vinegar to the pan and cook covered for another 3 minutes.

    Add the orange pieces to the onions, mix in the basil, then transfer everything onto plates.

    Wipe out the pan, then heat it strongly. Lightly season the fish slices with salt.

    Place the salmon fillets pistachio side down into the hot pan and sear for 30 seconds on high heat. Flip, sear another 30 seconds, then set them atop the onion mixture and serve.
