Ingredients

  • 250 g dried black beans
  • 500 g long grain rice
  • 2 green bell peppers
  • 3 onions
  • 6 Garlic cloves
  • 4 tbsp olive oil
  • 1 tsp cumin
  • 3 bay leaves
  • 2 tbsp white wine
  • 2 sprigs oregano
  • Salt

Instructions

    Soak the beans overnight, drain the next day and simmer in 1.25 l water for about 1½ hours until tender. Combine rice, beans and ¾ l water in a pot. Halve the peppers, remove seeds, wash and dice. Peel and finely chop onions and garlic.

    Heat oil in a pan and sauté the vegetables with cumin, then add to the pot. Add bay leaf and wine, season with salt, and simmer for about 20 minutes until the rice is cooked. Garnish with fresh oregano before serving.
