Ingredients
- 150 g red lentils
- 1 clove garlic
- 1 egg
- 30 g spelt whole grain flour (3 tbsp)
- 60 g rolled oats (4 tbsp)
- Salt
- Pepper
- 0.5 tsp Herbes de Provence
- a pinch of cayenne pepper
- 2 tbsp olive oil
- 150 g low-fat quark (or skyr)
- 125 g arugula
- 125 g tomatoes

Cook the lentils for about 12–15 minutes in double the amount of water until soft, drain and let cool. Meanwhile, peel and chop the garlic. Mix the lentils with garlic, egg, flour and oats. Season the mixture with salt, pepper, herbs and cayenne pepper. Shape 6–8 patties from it.

Heat oil in a pan and fry the patties until golden brown on both sides for about 5 minutes.

Meanwhile, mix quark with 2–3 tbsp water, season with salt, pepper and cayenne pepper. Wash and dry shake the arugula. Clean, wash and chop the tomatoes into small pieces. Serve the patties with quark dip, arugula and tomatoes.
