Lentil Curry Spread

The lentil curry spread is a protein-rich spread with an exotic touch.
Ingredients
- 60 g red lentils
- 0.5 Red Onion
- 1 tsp Olive oil
- 30 g sheep cheese (45% fat in cream)
- 2 sprigs parsley
- 0.5 organic lemon (zest and juice)
- Salt
- Pepper
- 0.5 tsp Curry Powder
Instructions

Cook the lentils in twice their volume of boiling water for 15 minutes over medium heat until tender, then drain and let cool.

Peel and chop the onion. Heat oil in a pan, sauté the onion for 2 minutes over medium heat.

Blend the lentils, onion, and sheep cheese with an immersion blender. Wash, dry, finely chop the parsley and fold it into the spread. Season with lemon zest and juice, salt, pepper, and curry powder.
