Ingredients
- 250 g red lentils
- 1 onion
- 1 Garlic clove
- 300 g tomatoes
- 2 tbsp plant oil
- 1 tsp freshly grated ginger
- 1 tsp turmeric
- 0.5 tsp cayenne pepper
- 0.5 tsp ground coriander
- 0.5 tsp cumin
- 400 ml Vegetable broth
- Salt
- ground black pepper
- 2 tbsp fresh chopped cilantro

Rinse the lentils under a sieve and soak them overnight in water. Peel and finely chop the onion and garlic. Blanch the tomatoes, cool, peel, seed, and dice them small.

Heat oil in a pot and sauté the onion with garlic until translucent. Add lentils, tomatoes, ginger, and spices; stir briefly and deglaze with broth. Simmer over medium heat for 30-40 minutes. Season with salt and pepper, then serve sprinkled with cilantro.
