Ingredients

  • 500 g asparagus
  • 100 g lentils
  • 1 onion
  • 2 tbsp white wine vinegar
  • 1 tsp Mustard
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp olive oil
  • 2 tbsp chives

Instructions

    Wash the asparagus, thinly peel the lower third and trim the ends. Cook in boiling salted water for 12–15 minutes until firm.

    Rinse lentils thoroughly under running water, then simmer with 200 ml water over low heat covered for about 10 minutes until all liquid is absorbed. Peel the onion and slice into thin rings. Drain the asparagus, let it dry, and cut diagonally into 3 cm pieces. Mix onion rings, asparagus pieces, and lentils.

    Whisk together vinegar, mustard, salt, pepper, and olive oil; taste and adjust seasoning. Toss with the salad mixture and allow to rest briefly. Sprinkle with chives before serving.
