Lemon Quark Mousse

Ingredients

  • 8 sheets white gelatin
  • 1 untreated lemon (juiced)
  • 90 g sugar
  • 200 g Cream cheese
  • 300 g lemon buttermilk
  • 200 g whipping cream
  • 2 untreated lemons (sliced for garnish)

Instructions

    Soak the gelatin in cold water. Wash one lemon with hot water, dry it and grate its zest. Mix the lemon juice with the quark and buttermilk.

    Add the gelatin to a pot, dissolve it over low heat while stirring. Fold the gelatin into the quark mixture; once it starts to set, beat the whipping cream until stiff peaks form and fold it in. Line small molds with lemon slices. Carefully pour the mousse into the molds and chill for at least 4 hours until firm.

    After chilling, briefly dip the molds in hot water and release the lemon panna cotta onto plates.
