Ingredients
- 220 g butter
- 90 g powdered sugar (from cane sugar)
- 1 egg
- 1 pinch salt
- 1 tsp grated lemon zest
- 2 tbsp lemon juice
- 300 g spelt flour
Instructions

Beat the butter and powdered sugar in a bowl with an electric mixer until fluffy. Stir in the egg. Add the salt, lemon zest, and lemon juice and mix well. Fold in the spelt flour and work into a smooth dough.

Fill a piping bag fitted with a star tip with the dough and pipe star-shaped shapes onto a baking sheet lined with parchment paper.

Bake the Lemon Spritz Cookies in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for about 12 minutes until pale yellow. Remove and cool on a wire rack.
