Ingredients

  • 125 g softened butter
  • 125 g sugar
  • 2 tbsp vanilla sugar
  • 1 tsp lemon zest
  • 2 egg whites
  • 125 g flour
  • 150 g dark chocolate couverture

Instructions

    Preheat the oven to 180°C fan‑forced. Cream together the butter, sugar, vanilla sugar and lemon zest until smooth. Add the egg whites and continue creaming; then fold in the flour to form a supple dough.

    Fill a piping bag fitted with a plain tip with the dough and pipe 4–5 cm long strips (cat’s tongues) onto a baking sheet lined with parchment paper, leaving space between them as they will spread slightly.

    Bake in the preheated oven for about 10 minutes until light yellow. Remove from the oven, carefully lift the cookies off the tray and let cool. Melt roughly chopped chocolate over a double boiler to use for decoration.

    Dip half of each cookie into the melted chocolate along its length and set on a cooling rack to dry. Fill another piping bag with remaining chocolate and pipe decorative swirls onto the cookies as desired, then allow to set.
