Ingredients

  • 300 g soft butter
  • 150 g sugar
  • 1 egg
  • 400 g flour
  • 1 pinch salt
  • 6 Eggs
  • 300 g sugar
  • 50 g cornstarch
  • 1 pinch salt
  • 4 untreated lemons (zest and juice)
  • powdered sugar (for dusting)

Instructions

    Beat the soft butter with the sugar until fluffy. Fold in the egg. Mix the flour with the salt and stir half into the batter, then knead the remaining half by hand. Shape into a ball and chill for 1 hour.

    Preheat the oven to 160°C fan. Roll out the dough thinly on a lightly floured surface and place it on a baking sheet lined with parchment paper. With lightly floured hands shape the dough to the size of the baking sheet. Prick the base several times with a fork and bake in the preheated oven for 15 minutes.

    Beat the eggs with sugar until fluffy. Mix in the cornstarch, salt, lemon juice and zest, then spread the mixture over the dough base.

    Bake in the oven another 25-35 minutes until golden.

    Remove from the oven, let cool, cut into small squares and dust with powdered sugar before serving.
