Ingredients
- 300 g butter
- 300 g sugar
- 5 eggs
- 1 tsp Baking powder
- 200 g Flour
- 100 g cornstarch
- 3 lemons (juice)
- 3 tbsp sugar
- 1 tbsp finely grated lemon zest
- butter (for the pan)
- 250 g powdered sugar
- 4 tbsp Lemon juice
Instructions

Whisk softened butter with sugar and eggs until thick and golden yellow.

Sift together flour, baking powder, lemon zest, and cornstarch; fold into the butter mixture along with lemon juice.

Pour batter into a greased loaf tin, smooth top, bake in preheated oven at 200°C for about 50 minutes. If cake darkens halfway, cover with foil.

Remove finished cake (test with a toothpick), let cool in tin for ~5 minutes, then release and cool on a wire rack.

For decoration whisk lemon juice with powdered sugar until thick; brush over cake and allow to set.
