Lemon Cake with Glaze

Ingredients
- soft butter (for the pan)
- soft breadcrumbs (for the pan)
- 2 untreated lemons
- 150 g flour
- 150 g cornstarch
- 1 tsp Baking powder
- 5 eggs
- 225 g sugar
- 250 g butter
- 150 g powdered sugar
- 4 tbsp Lemon juice
- 1 tsp poppy seeds

Preheat oven to 160°C fan. Grease loaf pan and dust with breadcrumbs.

Wash lemons hot, pat dry, grate zest and squeeze juice. In a bowl combine flour, cornstarch and baking powder. Melt butter in small pot. Beat eggs in mixing bowl until frothy. Add lemon juice and zest. Alternately fold in melted butter and dry mixture into egg cream until smooth batter forms. Pour batter into pan and bake 50-60 minutes until golden brown (test with skewer).

Remove from oven, rest briefly and cool on wire rack.

For glaze whisk powdered sugar with lemon juice to thick consistency and coat cake. Sprinkle poppy seeds and let set.
