Ingredients
- 1200 g red potatoes
- 4 organic lemons
- 5 tbsp olive oil
- Salt
- Pepper
- 4 sprigs Parsley
Instructions

Wash potatoes thoroughly and slice them. Rinse lemons under hot water, pat dry, and slice; remove seeds.

Brush a large baking dish with 1 tsp oil. Layer potato slices alternately with lemon slices, drizzle remaining oil over the top, and lightly season with salt and pepper. Bake in a preheated oven at 200 °C (180 °C fan) for about 40 minutes.

Meanwhile wash parsley, shake dry, pluck leaves and chop. Sprinkle the lemon potato gratin with parsley before serving.
