Fried Potato Wedges

Ingredients

  • 1 kg waxy potatoes
  • 1 l plant-based frying oil
  • 1 Egg white
  • 60 g Whole wheat breadcrumbs
  • 1 tsp Paprika powder (sweet)
  • Salt
  • Pepper

Instructions

    Wash the potatoes thoroughly, brush off dirt, then cut into sticks.

    Preheat frying fat to 120 °C and par‑fry the potato sticks in batches for about 4 minutes. Drain and let cool completely.

    Whisk the egg white. Mix the breadcrumbs with paprika powder, salt, and pepper. Toss the potatoes in the egg white and coat them in the breadcrumb mixture.

    Just before serving, heat the frying fat to 180 °C and fry the potato sticks for 3–4 minutes until golden brown. Drain and serve.
