Grilled Meat Patties with Mushrooms

Ingredients

  • 1 old-fashioned roll
  • 1 large onion
  • 500 g mixed ground beef
  • 1 egg
  • 1 tbsp Medium-hot mustard
  • Salt
  • Pepper (freshly ground)
  • flour (for dusting)
  • 2 onions
  • 250 g stone champignon mushrooms
  • 1 tbsp clarified butter (for frying)
  • parsley (for garnish)

Instructions

    Soak the roll in a small bowl with lukewarm water. Peel and finely dice the onion. Place the ground beef in a bowl, create a well and add the diced onion. Crack the egg into the well. Squeeze out excess water from the roll and mix it with mustard into the beef. Season with salt and pepper, then knead everything by hand into a smooth meat dough. Divide the dough into 8 portions and shape each into a patty using lightly floured hands. Preheat the grill.

    Peel the onions and slice them into rings. Clean the mushrooms and cut them into slices. Wash the parsley, shake dry, and pull leaves from stems. Grill the patties for 4–5 minutes on each side until browned (they must be fully cooked).

    Pan‑fry the onion rings in hot clarified butter until golden brown. Remove and place on a plate. Cook the mushrooms in the same pan until they release no more liquid, seasoning with salt and pepper. Distribute the onions over the patties and sprinkle with parsley leaves.
