Lemon Parfait with Fruits

Ingredients
- 2 lemons juice
- 80 g sugar
- 2 packets vanilla sugar
- zest of 1 lemon
- Lemon balm
- 4 egg yolks
- 400 ml whipping cream
- 125 g strawberries
- 1 Mango
- 2 tbsp orange liqueur

Boil lemon juice with sugar, vanilla sugar and grated lemon zest until the sugar dissolves. Rinse lemon balm, shake dry and pluck the leaves (reserve some for garnish). Finely chop lemon balm leaves.

Whisk egg yolks in a bowl, slowly pour hot lemon syrup into it while whisking until a creamy mixture forms. Place the bowl in an ice bath and stir to cool. Whip cream stiffly and fold in with lemon balm. Pour the mixture into a narrow mold and freeze for 4-5 hours.

Just before serving rinse strawberries, clean and slice them. Peel mango and cut the flesh into thin strips away from the fibrous core. Drizzle fruits with orange liqueur.

Pour out the parfait and portion it. Arrange on plates with the fruits and garnish with lemon balm.
