Ingredients
- 4 sheets white gelatin
- 2 untreated limes
- 0.5 Vanilla bean
- 250 ml milk
- 300 ml heavy cream
- 50 g sugar
- lime leaf (for garnish)
- candied lemon zest (for garnish)
Instructions

Soak the gelatin in cold water.

Rinse the limes under hot water, slice one lime thinly and juice the rest.

Split the vanilla bean lengthwise and combine it with milk, cream, lime juice, and sugar in a saucepan; bring to a boil.

Remove from heat, discard the vanilla pod, dissolve the well-extracted gelatin into the hot cream mixture, then pour into ramekins and refrigerate for about 4 hours.

Serve garnished with lime slices, leaves, and candied lemon zest.
