Lemon Meringue Tart

Ingredients
- 150 g flour
- 1 tbsp powdered sugar
- 1 tbsp cold water
- 125 g butter
- butter (for greasing the pan)
- 6 egg yolks
- 400 g sweetened condensed milk
- 5 limes
- 6 egg whites
- 175 g sugar
- 0.25 tsp baking powder
- 1 untreated lemon (lemon zest for garnish)
Instructions

Knead flour with powdered sugar, water and chopped butter quickly into dough, shape into a ball, wrap in foil, chill 1 hour.

Roll out dough, place in greased pan, form a rim, prick base with fork several times. Cover with parchment paper, sprinkle generously with dried legumes, bake at 150°C for about 12 minutes. Remove paper and legumes, bake another ~5 minutes, let cool.

For the filling whisk egg yolks with condensed milk until thick. Wash limes hot, grate zest from two limes, add to mixture. Juice remaining limes, measure about 1/8 L of juice, add to cream. Stir cream, spread over base, smooth top, bake for ~20 minutes.

Whisk egg whites into very stiff peaks, gradually sift in sugar and baking powder. Spread meringue dome-shaped over cake, fan out with a tablespoon. Bake until golden brown (~5 minutes). Let cool in pan.
