Ingredients

  • 2 fresh egg yolks
  • 1 pinch salt
  • 1 tsp Mustard
  • 1 lemon (zest and juice)
  • 0.5 tsp turmeric
  • 250 ml olive oil
  • 1 tsp chopped parsley

Instructions

    Ensure all ingredients are at room temperature before making the mayo. Whisk the egg yolk with salt, mustard, and 1 tbsp lemon juice vigorously. Then, using a whisk or hand mixer, add a few drops of oil to start, followed by a slow, thin stream of oil while continuously whisking until the mixture thickens into a creamy mayonnaise. Add the zest, turmeric, and remaining lemon juice, seasoning with salt and pepper to taste.
