Ingredients
- 100 g butter cookies
- 2 tbsp shelled almonds
- 50 g liquid butter
- 200 g Cream cheese
- 100 g lemon curd
- 80 ml whipping cream
- 1 very fresh egg white
- 1 tsp lemon juice
- 2 tbsp powdered sugar
- candied lemon zest strips for garnish
Instructions

Crush the cookies with the almonds and mix with butter to form crumbs. Fill 4 small molds.

Whisk the cream cheese with the lemon curd until smooth. Beat the cream stiff and fold in. Spoon the cream over the crumbs. Whip the egg white with lemon juice and powdered sugar until creamy, then top the cream. Garnish with candied lemon and serve immediately.
